I have been making this recipe for years. It's easy and delicious. Since the potatoes are cut into cubes I don't precook them. In half an hour they are done and I don't like mush!

Ham and Potatoes Au Gratin

1/4 Cup Chopped Red & Green Peppers
1/4 Cup Chopped Onions
2 Tbs Butter or Marg
3 Cup Diced Potatoes
(cooked potatoes)
1 # cooked ham cubed
1/4 cup mayo
1 Tbs Flour
1/8 tsp pepper
3/4 Cup Milk
1 Cup Shredded Cheddar Cheese

Saute in 1 tbs butter the onions and peppers. Mix with the potatoes, ham and mayo. Melt 1 tbs butter and add the flour, pepper, milk and cheese. Stir until melted. Pour over potatoes and bake covered in an 11 x 7 x 2 pan. 375 degrees 30 minutes.

I take the lid off and broil the last few minutes for a nice golden color. You can add more potatoes and less ham to suit your taste. It's a very forgiving recipe. With the potatoes cubed you really don't have to cook them first. I don't I just test them with a fork til soft.
