    ~tj~'s Twice Baked Potatoes

    I just have to guess at my measurements because I always just eyeball it.

    Open a beer and take drink.
    While about 6 medium to good sized baker potatoes are baking.....
    melt a stick, maybe a lil more? of butter..
    finely chop up 1/2 a large onion (I always use white).
    Sautee those in the butter until they turn clearish. I add seasoned salt, garlic salt and pepper. Don't let them brown at all... just a low setting.
    Take another drink of beer.
    Grate a whole shitload of med or sharp cheddar cheese. We're talking at least a pound. Set aside. Take another couple gulps of beer.

    When the potatoes are done and cooled off enough to handle, scoop out the middles into big bowl. Take another drink of beer.

    Add the onions & butter to the potatoes
    about 1 cup sour cream, maybe a little more?
    1/2 of the cheese you grated
    and if you like mushrooms add a can

    Stir that all up good. I like to leave it a tiny bit chunky.... not smooth like mashed. Take another good sip of beer.

    Fill the skins back up and put in baking dish. Sprinkle the 2nd 1/2 of the cheese on top. Bake uncovered at 325 until the cheese is nice and melted.

    More from tj on the double baked

    Scrub taters and bake
    chop onions and saute in lots of butter
    add S&P
    add a can of mushrooms
    scoop out taters
    add first mixture
    grate lots of cheddar
    add to mixture
    add sour cream, I put a lot
    add to mixture
    sprinkle more cheddar on top

    bake about 20 min

    Thanks Justy adn tj !

    Twice baked potatoes are one of my faves, and I'm generally not big on potatoes. Reminds me of holidays when I was a kid and my grandma and mom would make them with a baked ham .
