    Pumpkin Soup.

    Fry some onion and bacon in a pot,can also add garlic if you wish.
    Add chopped up pumpkin and cover with water,cook until pumpkin is tender then blitz until smooth.
    Serve with a dollop of sour cream and chopped chives.

    This sounds really good. I think I've made a version of it using chicken stock and roasted pumpkin pieces. This sounds simpler and the bacon in it would really add some flavor!

    ETA: Hubby always throws our old Halloween pumpkins back just behind the garden at the edge of the woods. They decompose over the winter and lo and behold, we have pumpkins growing 'wild' the next year (if the bunnies don't gnaw through the vines). Rinse and repeat each year .

    Did you give away most your haul of pumpkins from your garden?

    Usually . This past year we only had 2, lol. I kept one for the front step for Halloween, gave the other one to my dil to carve. Last spring was crazy with all the rabbits around, I had to put cages around flowers (potted and/or in the ground) that were right up next to the house, even under the front window. And those hungry little bunnies chewed through all but one pumpkin vine and killed them. First time that ever happened in the 30+ years we've lived here. This year is looking better, though!
