    MJ's mini rhubarb turnovers

    Pick/cut some rhubarb, about 6 cups after I cut it up into bite sized pieces. I then put it all in my dutch oven on the stove top, added just a couple tablespoons of water and cranked up the heat. When most of the juices were released, I added 2 regular size boxes of raspberry jello. I simmered it for another 15-20 minutes or so then let it cool and put it in the fridge. After fully cooled in the fridge, it is like canned pie filling and is sooooo good! I am not a big fan of rhubarb, but I do like it this way. I've done the same using blueberry jello and sometimes add other fruit or berries to the rhubarb as well. I got quite a big yield and instead of making pie(s) with it, I'm going to make a big batch of mini turnovers using 3 cans of crescent roll dough. Just fill each triangle of dough with some of the filling, brush with melted butter with some vanilla mixed in, and then pour a little Sprite in the bottom of the pan and bake until golden brown and glazed.
