Cornbread Pudding
8oz box of Jiffy corn muffin mix
15oz can of whole kernel corn, slightly drained
15oz can of creamed corn-not drained
1 cup of sour cream (don't skimp and use low-fat)
1/2 cup of melted butter (use REAL butter!)

Preheat oven to 350 degrees.
In a bowl, mix all of the ingredients together and pour into a greased 8"X8" baking dish. Cook uncovered for 45-50 minutes or until lightly browned.

I'm doubling the recipe and adding shredded cheddar cheese.
